Cooking French Mushroom Sauce:
Step 1: prepare the dried mushrooms.
We sort through the dried mushrooms, then rinse under running water. We shift them into a free bowl and pour half a glass of warm boiled water. Set aside the container while cooking other vegetable ingredients. After that, pour the water into a separate bowl, and transfer the mushrooms to a free container.
Step 2: prepare the onion.
Peel the onion with a kitchen knife and rinse well under running water. Then we shift the vegetable to a cutting board and cut into very small pieces. Transfer the chopped onion into a free bowl.
Step 3: prepare the garlic.
We put the garlic cloves on a cutting board and, pressing the handle of the knife on them, remove the husk. Then, using a kitchen knife, finely chop the cloves of garlic and transfer to a bowl of onion. Attention: if you wish, you can chop the garlic with the help of the garlic.
Step 4: prepare the celery stalks.
For the preparation of mushroom sauce, we will use only celery stalks, so before washing them under running water with a kitchen knife, cut off the root and green leaves of the vegetable. Step 5: prepare the champignons.

Attention: if you have freshly frozen mushrooms, then before you cut them into plates, you need to defrost the mushrooms to room temperature. To do this, free the mushrooms from packaging and transfer to a free plate, let them melt. Mushrooms should not be thawed with a microwave or under a hot stream of water.
Step 6: prepare the mushroom sauce in French.
Pour into the pan 2 tablespoons of vegetable oil and put chopped onions, garlic and celery stalks into this bowl. Stew the vegetables over low heat under a lid, stirring them occasionally with a tablespoon. Attention: vegetables do not need to overcook.

We put the container on a large fire and fry them for 5-8 minutes, constantly stirring with a tablespoon until a slightly golden crust is formed. After that, we transfer the fried mushrooms into a free pan and pour the vegetable puree from the blender bowl into the same container. We put the dishes on a small fire and, constantly stirring the mass with a tablespoon, simmer the sauce for 3-5 minutes. Then we turn off the burner, and set the pan with the help of kitchen tacking aside. Mushroom sauce is ready in French.
